Description
A refreshing twist on classic tiramisu, featuring creamy mascarpone and zesty lemon flavors layered with ladyfingers.
Ingredients
Scale
- 1/2 cup freshly squeezed lemon juice (about 3 lemons)
- 1/2 cup water
- 1/3 cup granulated sugar
- 1 1/2 cups heavy whipping cream, cold
- 1 cup mascarpone cheese, room temperature
- 1/2 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1 tablespoon lemon zest
- 1 package (200–250g) ladyfinger cookies (Savoiardi)
- Extra lemon zest or candied lemon slices, for garnish
Instructions
- Combine the lemon juice, water, and granulated sugar in a small saucepan. Bring to a gentle simmer and stir until sugar is dissolved.
- Pour the heavy whipping cream into a mixing bowl and beat until soft peaks form. Gradually add powdered sugar and vanilla while continuing to whip until stiff peaks form.
- Mix the mascarpone cheese and lemon zest in another bowl. Gently fold the whipped cream into the mascarpone mixture until smooth.
- Dip each ladyfinger in the lemon syrup for 2-3 seconds and layer in a dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and remaining mascarpone mixture.
- Cover with plastic wrap and chill in the refrigerator for at least 4 hours, preferably overnight.
- Dust with extra lemon zest or candied lemon slices before serving.
Notes
For a twist, try adding layers of fresh berries or substitute half the mascarpone with coconut cream.
