Description

A refreshing twist on classic tiramisu, featuring creamy mascarpone and zesty lemon flavors layered with ladyfingers.


Ingredients

  • 1/2 cup freshly squeezed lemon juice (about 3 lemons)
  • 1/2 cup water
  • 1/3 cup granulated sugar
  • 1 1/2 cups heavy whipping cream, cold
  • 1 cup mascarpone cheese, room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon zest
  • 1 package (200–250g) ladyfinger cookies (Savoiardi)
  • Extra lemon zest or candied lemon slices, for garnish

Instructions

  1. Combine the lemon juice, water, and granulated sugar in a small saucepan. Bring to a gentle simmer and stir until sugar is dissolved.
  2. Pour the heavy whipping cream into a mixing bowl and beat until soft peaks form. Gradually add powdered sugar and vanilla while continuing to whip until stiff peaks form.
  3. Mix the mascarpone cheese and lemon zest in another bowl. Gently fold the whipped cream into the mascarpone mixture until smooth.
  4. Dip each ladyfinger in the lemon syrup for 2-3 seconds and layer in a dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and remaining mascarpone mixture.
  5. Cover with plastic wrap and chill in the refrigerator for at least 4 hours, preferably overnight.
  6. Dust with extra lemon zest or candied lemon slices before serving.

Notes

For a twist, try adding layers of fresh berries or substitute half the mascarpone with coconut cream.
