- 1.5 pounds yellow potatoes, cut into 1-inch pieces
- 1 tablespoon olive oil for potatoes
- 1 teaspoon garlic powder
- 1 teaspoon salt (plus more to taste)
- 1 teaspoon black pepper (plus more to taste)
- 4 small zucchinis, sliced into 1-inch pieces
Instructions
- Marinate the Chicken: In a bowl, mix the lemon juice, olive oil, minced garlic, oregano, paprika, salt, and black pepper. Add chicken and ensure it’s fully coated. Marinate for at least 30 minutes.
- Prepare the Potatoes: Preheat your oven to 400°F (200°C). Toss cubed potatoes with olive oil, garlic powder, salt, and black pepper.
- Roast the Potatoes: Spread on a baking sheet and roast for 25 minutes until golden and crispy.
- Cook the Chicken: Heat a skillet, add olive oil, and cook chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C).
- Sauté the Zucchini: After removing chicken, sauté the zucchini in the same skillet for about 3-4 minutes.
- Assemble Your Meal Prep: Slice chicken and divide all ingredients among storage containers.
