  • 1.5 pounds yellow potatoes, cut into 1-inch pieces
  • 1 tablespoon olive oil for potatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. Marinate the Chicken: In a bowl, mix the lemon juice, olive oil, minced garlic, oregano, paprika, salt, and black pepper. Add chicken and ensure it’s fully coated. Marinate for at least 30 minutes.
  2. Prepare the Potatoes: Preheat your oven to 400°F (200°C). Toss cubed potatoes with olive oil, garlic powder, salt, and black pepper.
  3. Roast the Potatoes: Spread on a baking sheet and roast for 25 minutes until golden and crispy.
  4. Cook the Chicken: Heat a skillet, add olive oil, and cook chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C).
  5. Sauté the Zucchini: After removing chicken, sauté the zucchini in the same skillet for about 3-4 minutes.
  6. Assemble Your Meal Prep: Slice chicken and divide all ingredients among storage containers.
