- 4 (6 oz) Salmon fillets
- 1/4 cup Unsalted butter
- 2 tablespoons Fresh lemon juice
- 2 cloves Garlic, minced
- Salt and pepper, to taste
- Lemon slices, for garnish
- Fresh parsley, chopped
- 1.5 lbs Baby potatoes, halved
- 3 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
- 1 lb Broccoli florets
- 2 tablespoons Olive oil (for broccoli)
- Salt and pepper (for broccoli)
- 1 teaspoon Lemon zest (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the potatoes by tossing them in a bowl with olive oil, garlic powder, paprika, salt, and pepper.
- Roast the potatoes on a baking sheet for 20-25 minutes until golden brown and crispy.
- Prepare the broccoli by tossing the florets with olive oil, salt, and pepper.
- Add the broccoli to the baking sheet after the potatoes have roasted for 15 minutes.
- Cook the salmon in a skillet over medium heat with melted butter and minced garlic for about 4-5 minutes per side.
- Add lemon juice to the salmon and cook until flakes easily with a fork.
- Plate the dish by layering the potatoes, broccoli, and top with salmon, garnishing with lemon slices and parsley.
Notes
Feel free to replace salmon with trout or another flaky fish. Experiment with different veggies and spices to suit your taste.
