  • 3 tbsp GHughes Sugar-Free Sweet Chili Sauce
  • ½ cup Lite Soy Sauce
  • 4 tbsp Swerve Brown Sugar Alternative
  • ¼ cup Scallions (or chopped green onions)
  • 2 tsp Ginger Paste (or fresh ginger equivalent)
  • 2 tsp Garlic Squeeze (or fresh garlic equivalent)
  • 1 tsp Red Pepper Flakes
  • 1 tbsp Rice Wine Vinegar
  • 3 tbsp Keto Honey
  • 2 tsp White Sesame Seeds (for garnish)
  • 3 cups Fresh Pineapple Chunks

Instructions

  1. Marinate the Chicken: In a large bowl, mix together the Frank’s Red Hot Sauce, GHughes Sweet Chili Sauce, lite soy sauce, Swerve Brown Sugar Alternative, ginger paste, garlic squeeze, rice wine vinegar, red pepper flakes, and keto honey. Add the chicken breast, cut into bite-sized pieces, to the marinade. Ensure every piece is coated well. Let it sit for at least 30 minutes, preferably overnight.
  2. Prepare the Rice: Rinse the rice under cold running water until clear. Cook according to package instructions, ideally in chicken broth for added flavor.
  3. Preheat the Grill: Fire up your grill to medium-high heat, soaking wooden skewers in water if using.
  4. Skewer the Chicken: Thread the marinated chicken onto skewers, alternating with pineapple chunks if desired.
  5. Grill Time: Grill skewers for about 5-7 minutes on each side or until chicken reaches 165°F (75°C), basting with leftover marinade.
  6. Plate and Garnish: Serve the skewers with a sprinkle of scallions and sesame seeds.

Notes
