Instructions

  1. Start by gathering all your ingredients. Shred your chicken if it’s not already done. Chop your veggies into bite-sized pieces; keep the carrots julienned for more texture.
  2. In a bowl, mix together the Greek yogurt, gochujang, honey (or maple syrup), and rice vinegar. Use a whisk to blend everything until smooth. Taste and adjust the seasoning with a pinch of salt and more honey if you prefer it sweeter.
  3. In a large mixing bowl, combine the shredded chicken and mixed veggies. Pour in the dressing and give it a good toss.
  4. Lay out your lettuce leaves on a large platter or individually on plates. Spoon the chicken salad mixture generously into the leaves.
