Description

Ingredients

  • 4 large carrots
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • Salt to taste
  • Chopped parsley for garnish

Instructions

  1. Prepare your carrots: Peel and cut them into thin, matchstick-sized strips.
  2. Bring a pot of salted water to a boil. Once boiling, add the carrots and let them cook for 2-3 minutes.
  3. Drain the carrots and plunge them into ice water to stop the cooking process.
  4. Whisk together the olive oil, cumin, paprika, lemon juice, and a pinch of salt in a mixing bowl.
  5. Combine the cooled carrots with the dressing and toss until well coated.
  6. Taste your creation and adjust the seasoning as needed. Let sit for 10-15 minutes.
  7. Garnish with chopped parsley before serving.
