Ingredients

- 4 large carrots
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 tablespoon lemon juice
- Salt to taste
- Chopped parsley for garnish
Instructions
- Prepare your carrots: Peel and cut them into thin, matchstick-sized strips.
- Bring a pot of salted water to a boil. Once boiling, add the carrots and let them cook for 2-3 minutes.
- Drain the carrots and plunge them into ice water to stop the cooking process.
- Whisk together the olive oil, cumin, paprika, lemon juice, and a pinch of salt in a mixing bowl.
- Combine the cooled carrots with the dressing and toss until well coated.
- Taste your creation and adjust the seasoning as needed. Let sit for 10-15 minutes.
- Garnish with chopped parsley before serving.
Notes
Serve with grilled meats or as part of a Mediterranean-themed buffet. Best enjoyed after sitting for a few hours or overnight.
