- 2 Tablespoons Honey
- 1 Tablespoon Vegetable Oil
- Juice of 1 Lime
- 1 Teaspoon Minced Garlic
- 1 Teaspoon Fresh Cilantro, Finely Chopped
- 2 Tablespoons Red Bell Pepper, Finely Chopped
- Optional: Pinch of Crushed Red Pepper or Minced Red Jalapeño for Heat

- Prepare the Marinade: In a mixing bowl, combine the soy sauce, honey, vegetable oil, lime juice, minced garlic, chopped cilantro, red bell pepper, and optional heat ingredients. Whisk it all together until it’s well blended and the honey has dissolved.
- Marinate the Chicken: Place your chicken breasts in a large resealable plastic bag or glass dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal it tightly and let the flavors meld for at least 30 minutes, or up to two hours in the fridge.
- Prepare the Grill: Preheat your grill over medium-high heat (about 375°F to 450°F). If you’re using a grill pan, preheat it on the stove. Brush the grates with a little oil to prevent sticking.
- Grill the Chicken: Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grill and cook for about 6-7 minutes on one side, then flip and continue grilling for another 6-8 minutes.
- Resting Time: Once grilled, transfer the chicken to a plate and let it rest for about 5 minutes.
- Slice and Serve: Slice the chicken against the grain for tenderness before serving it up on a beautiful platter. Optionally, drizzle any leftover marinade (boil it first to ensure it’s safe!) over the sliced chicken.
