Keto Stuffed Bell Peppers

Ingredients

4 large bell peppers, halved and seeded

1 lb ground beef or turkey

1/2 cup chopped onion

2 cloves garlic, minced

1 cup riced cauliflower

1 cup shredded mozzarella cheese

1/2 cup marinara sauce (no sugar added)

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

Preheat oven to 375°F (190°C).

In a skillet, sauté onion and garlic until soft. Add ground meat and cook until browned.

Stir in cauliflower rice, marinara, seasoning, and half the cheese. Cook 2–3 minutes.

Place bell pepper halves in a baking dish. Fill each with meat mixture.

Top with remaining cheese.

Cover with foil and bake 25 minutes. Remove foil and bake 10 more minutes until bubbly.

Garnish with parsley and serve warm.
