Description

Delicious low-carb Reuben-inspired roll-ups filled with corned beef, sauerkraut, and cheese, perfectly crispy and satisfying.


Ingredients

  • Sliced Corned Beef
  • Sauerkraut
  • Swiss or Cheddar Cheese
  • Butter or Cooking Spray
  • Mustard for Serving (optional)

Instructions

  1. Prepare your ingredients, gathering all items and draining the sauerkraut well.
  2. Lay out the corned beef slices slightly overlapping them to create a base.
  3. Add cheese and sauerkraut layers on top of the beef.
  4. Roll the slices tightly around the filling, securing with toothpicks if needed.
  5. Heat a non-stick skillet over medium heat and melt about 2 tablespoons of butter.
  6. Fry the rolled Reubens seam-side down for 3-4 minutes until golden brown, flipping carefully.
  7. Serve warm with mustard on the side.

Notes

For extra crispiness, rotate the roll-ups in the pan for even cooking. Assemble ahead and fry fresh when ready.
