Ingredients
Scale
- 1 bunch of kale, chopped and stems removed
- 1/4 cup extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1/4 cup grated or shaved parmesan cheese
- Croutons, homemade or store-bought
- Salt and pepper to taste
Instructions
- Wash and dry the kale, then remove the tough stems and tear into bite-sized pieces.
- Massage the kale with 1 tablespoon of olive oil and a pinch of salt for about 2-3 minutes.
- In a small bowl, whisk together the remaining olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
- If preparing homemade croutons, toast bread cubes in olive oil, salt, and pepper at 375°F until golden.
- Toss the massaged kale with the dressing until well coated, then fold in croutons and parmesan.
- Serve immediately, garnished with extra parmesan.
Notes
Kale holds up well for meal prep; store the dressing separately until ready to serve.
