Description

A vibrant and delicious twist on the classic Caesar salad, featuring nutrient-packed kale, creamy dressing, and homemade croutons.


Ingredients

Scale
  • 1 bunch of kale, chopped and stems removed
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 cup grated or shaved parmesan cheese
  • Croutons, homemade or store-bought
  • Salt and pepper to taste

Instructions

  1. Wash and dry the kale, then remove the tough stems and tear into bite-sized pieces.
  2. Massage the kale with 1 tablespoon of olive oil and a pinch of salt for about 2-3 minutes.
  3. In a small bowl, whisk together the remaining olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  4. If preparing homemade croutons, toast bread cubes in olive oil, salt, and pepper at 375°F until golden.
  5. Toss the massaged kale with the dressing until well coated, then fold in croutons and parmesan.
  6. Serve immediately, garnished with extra parmesan.

Notes

Kale holds up well for meal prep; store the dressing separately until ready to serve.
