- 5–6 Boneless Chicken Breasts or Thighs
- 2 Garlic Cloves, Minced
- 1 tbsp Fresh Ginger, Minced
- 1 tsp Ground Black Pepper
- 1/3 Cup Soy Sauce
- 1/3 Cup Water
- 3 tbsp Red Wine or Mirin
- 1/4 Cup + 2 tbsp Brown Sugar
- 1 tbsp Distilled Vinegar or Rice Vinegar
- 1 tbsp Cornstarch
- 6–7 Wooden Skewers (soaked in water for 10–20 minutes)
Instructions
- Prep your chicken by cutting it into bite-sized pieces.
- Make the marinade by mixing garlic, ginger, soy sauce, water, red wine or mirin, brown sugar, black pepper, and vinegar.
- Thread the marinated chicken onto soaked skewers, spacing them out.
- Prepare your grill by preheating it and lightly oiling the grates.
- Cook the skewers for about 4-5 minutes on each side, brushing with leftover marinade.
- Thicken the remaining marinade in a saucepan with cornstarch until it forms a glaze.
- Glaze the cooked skewers with the thickened marinade.
- Serve on a platter and enjoy with garnishes like scallions or sesame seeds.
