Ingredients
1 lb Italian sausage (mild or spicy)
1 small sweet onion, diced
3 carrots, peeled and diced
3 celery stalks, diced
4 cloves garlic, minced
1 tsp poultry seasoning
1 tsp Italian seasoning
1 tsp kosher salt
½ tsp black pepper
Pinch red pepper flakes (optional)
3 tbsp all-purpose flour
4 Yukon gold potatoes, cubed
6 cups chicken broth
2 (15 oz) cans white beans, drained and rinsed
1 cup heavy cream
1 bunch Tuscan kale, ribs removed, sliced thin
2 tbsp red wine vinegar
Optional Toppings:
Fresh parsley, chives, or basil
Freshly grated Parmesan cheese
Cracked black pepper
Instructions
In a large pot or Dutch oven, brown sausage over medium heat. Remove excess grease if needed.
Add onion, carrots, celery, and garlic. Sauté for 5–7 minutes, until vegetables are softened.
Stir in seasonings and flour. Cook for 1–2 minutes to eliminate raw flour taste.
Add potatoes and broth. Bring to a boil, then reduce to a simmer for 10–15 minutes, until potatoes are fork-tender.
Stir in white beans, heavy cream, and kale. Simmer another 5–7 minutes, until kale is wilted.
Finish with red wine vinegar and adjust salt/pepper to taste.
Serve hot with toppings of choice.
