I first made it for a family BBQ, and it disappeared before the burgers hit the grill! With tender pasta, smoky meats, sharp cheese, and that creamy, tangy dressing, it’s the kind of dish that’s made for sharing—and asking for seconds.
Ingredients
8 oz short pasta (rotini, penne, or shells)
1/2 cup diced salami
1/2 cup chopped ham
1/4 cup mini pepperoni or chopped pepperoni
1/2 cup cherry tomatoes, halved
1/2 cup provolone cheese, cubed
1/4 cup sliced pepperoncini peppers
1/4 red onion, thinly sliced
For the Dressing:
1/2 cup mayo
1 tbsp red wine vinegar
1 tsp Dijon mustard
1/2 tsp dried oregano
Salt and pepper to taste
Instructions
Cook pasta according to package directions. Drain and rinse under cold water.
In a large bowl, combine all meats, tomatoes, cheese, pepperoncini, and red onion.
In a small bowl, whisk together mayo, vinegar, mustard, oregano, salt, and pepper.
Toss cooled pasta with dressing and all mix-ins. Chill before serving for best flavor.
