Ingredients
2 cups cooked pasta (penne, rotini, or bowties)
2 cups cooked chicken breast, chopped or shredded
1 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/4 cup red onion, finely sliced
1/2 cup black olives, sliced
1/4 cup mozzarella balls or cubes
1/4 cup fresh basil or parsley, chopped
Dressing
3 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
1 tsp Italian seasoning
1 tsp Dijon mustard (optional)
Salt & pepper to taste
Instructions
Cook pasta to al dente, then rinse with cold water and drain.
In a large bowl, combine pasta, chicken, tomatoes, cucumber, onion, olives, mozzarella, and herbs.
In a small bowl, whisk together olive oil, vinegar, Italian seasoning, mustard, salt, and pepper.
Pour dressing over the salad, toss well, and chill for 20 minutes before serving.
