Deliciously marinated chicken thighs grilled to perfection and glazed with a sweet and spicy hot honey sauce, perfect for summer cookouts.

- 3 lbs chicken thighs (cut into cubes)
- 3 tablespoons Cajun seasoning
- Wooden or metal skewers
- ½ cup Frank’s RedHot sauce
- 1 stick (½ cup unsalted butter)
- ½ cup honey
- Fresh chives (chopped)
Instructions
- Marinate the chicken: In a large mixing bowl, combine the chicken thighs and Cajun seasoning. Toss the chicken until evenly coated. Cover and let the chicken marinate in the refrigerator for at least 30 minutes.
- Prepare the hot honey sauce: In a small saucepan, melt the butter over medium heat. Stir in Frank’s RedHot sauce and honey, then let the mixture simmer for about 5 minutes. Remove from heat.
- Assemble the skewers: Soak wooden skewers in water while the chicken marinates. Thread the chicken cubes onto skewers, aiming for about 4-5 pieces per skewer.
- Grill the skewers: Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 5-6 minutes on each side, basting with hot honey sauce during the last 2-3 minutes.
- Serve and enjoy: Remove the skewers from the grill, let them rest for 5 minutes, then drizzle with remaining hot honey sauce and garnish with chopped chives.
Notes
For an extra kick, consider adding fresh chopped jalapeños to the hot honey sauce. Adjust the Cajun seasoning to your taste for desired heat.
