- 2 limes (juiced)

- 1 avocado (diced)

- 1/4 cup sour cream
Instructions
- Marinate the Chicken: In a medium bowl, combine the honey, lime juice, chili powder, cumin, salt, and pepper. Whisk it together until it’s well blended. Place the chicken in a resealable bag or shallow dish, pour the marinade over it, seal, and let it marinate in the refrigerator for at least 30 minutes.
- Cook the Rice: While the chicken marinates, cook your rice according to package instructions. Consider using chicken broth for more flavor.
- Grill or Cook the Chicken: Preheat your grill or skillet over medium-high heat. Cook the chicken for about 6-7 minutes on each side or bake in a preheated oven at 375°F (190°C) for about 25-30 minutes.
- Prepare the Avocado: Dice your avocado and chop the cilantro, sprinkling with lime juice to prevent browning if desired.
- Assemble the Stack: Once the chicken is cooked, let it rest before slicing. On a plate, layer rice, sliced chicken, diced avocado, cilantro, and a dollop of sour cream.
