- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the honey, soy sauce, minced garlic, olive oil, paprika, and thyme in a large bowl. Whisk until well combined.
- Add the chicken breasts to the bowl, tossing until completely covered in the honey garlic mixture. Let sit for 10 minutes.
- Toss the sweet potatoes in a bit of olive oil, salt, and pepper, and spread them out on a large sheet pan.
- Roast the sweet potatoes in the preheated oven for about 15 minutes.
- Add the chicken breasts to the pan and pour any remaining marinade over them.
- Scatter the trimmed green beans around the chicken, drizzle with olive oil, and sprinkle with salt and pepper.
- Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are fork-tender.
- Let rest for a few minutes, then serve and enjoy!
Notes
For additional flavor, you can add red pepper flakes for a spicy kick or mix in citrus juice for a fresh twist.
