Ingredients

  • 4 chicken thighs or breasts
  • 1 cup honey BBQ sauce
  • 2 pounds baby potatoes
  • 3 tablespoons garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the chicken pieces and honey BBQ sauce in a mixing bowl and let marinate for at least 15 minutes.
  3. Wash and halve the baby potatoes, then toss them with olive oil, minced garlic, salt, and pepper.
  4. Arrange the chicken pieces and seasoned potatoes on a large baking sheet.
  5. Place the pan into the preheated oven and bake for about 35-40 minutes.
  6. Sprinkle grated Parmesan cheese over the potatoes in the last 10 minutes of baking.
  7. Check the chicken for an internal temperature of 165°F (75°C) and ensure the potatoes are fork-tender.
  8. Sprinkle freshly chopped parsley over the dish before serving.

Notes

For a spicier version, add cayenne pepper to the honey BBQ sauce. Pair with a side salad or grilled veggies for a complete meal.
