- 4 chicken thighs or breasts
- 1 cup honey BBQ sauce
- 2 pounds baby potatoes
- 3 tablespoons garlic, minced
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the chicken pieces and honey BBQ sauce in a mixing bowl and let marinate for at least 15 minutes.
- Wash and halve the baby potatoes, then toss them with olive oil, minced garlic, salt, and pepper.
- Arrange the chicken pieces and seasoned potatoes on a large baking sheet.
- Place the pan into the preheated oven and bake for about 35-40 minutes.
- Sprinkle grated Parmesan cheese over the potatoes in the last 10 minutes of baking.
- Check the chicken for an internal temperature of 165°F (75°C) and ensure the potatoes are fork-tender.
- Sprinkle freshly chopped parsley over the dish before serving.
Notes
For a spicier version, add cayenne pepper to the honey BBQ sauce. Pair with a side salad or grilled veggies for a complete meal.
