- 4 Chicken Breasts
- 1 Cup Honey BBQ Sauce
- 4 Medium Potatoes
- 2 Tablespoons Olive Oil
- 1 Cup Grated Parmesan Cheese
- 4 Cloves Garlic, Minced
- Salt and Pepper, to taste
- Fresh Parsley for Garnish
Instructions
- Preheat your oven: Set your oven to 400°F (200°C).
- Prepare the chicken: Pat the chicken breasts dry with paper towels and season them with salt and pepper.
- Glaze with BBQ sauce: Mix ¾ of the BBQ sauce with a drizzle of olive oil and coat the chicken.
- Chicken in the oven: Bake the glazed chicken for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Prepare the potatoes: Wash and cut the potatoes into bite-sized cubes.
- Season and toss: Combine potatoes, olive oil, garlic, salt, pepper, and half of the Parmesan cheese; toss well.
- Roast the potatoes: Spread them on a baking sheet and roast for 20-25 minutes until golden brown.
- Add the cheese: In the last 5 minutes of cooking, sprinkle the remaining Parmesan on the potatoes.
- Check the chicken: Baste the chicken with the remaining BBQ sauce if close to done.
- Rest and serve: Let the chicken rest for 5 minutes before serving.
- Plate it up: Serve the chicken and potatoes together, garnished with fresh parsley.
