  • 4 boneless chicken breasts
  • 1 cup honey BBQ sauce
  • 2 pounds baby potatoes
  • 4 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken by soaking it in honey BBQ sauce for 15-30 minutes.
  3. Wash the baby potatoes and toss them in a bowl with olive oil, minced garlic, salt, and pepper.
  4. Bake the seasoned potatoes on a baking sheet for about 20 minutes, tossing halfway through.
  5. Sear the marinated chicken breasts in a skillet until golden brown, about 4-5 minutes on each side.
  6. Combine the chicken and potatoes on the baking sheet, glaze with reserved honey BBQ sauce, and sprinkle with Parmesan.
  7. Bake for another 15-20 minutes until the chicken is cooked through.
