- 4 boneless chicken breasts
- 1 cup honey BBQ sauce
- 2 pounds baby potatoes
- 4 tablespoons olive oil
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the chicken by soaking it in honey BBQ sauce for 15-30 minutes.
- Wash the baby potatoes and toss them in a bowl with olive oil, minced garlic, salt, and pepper.
- Bake the seasoned potatoes on a baking sheet for about 20 minutes, tossing halfway through.
- Sear the marinated chicken breasts in a skillet until golden brown, about 4-5 minutes on each side.
- Combine the chicken and potatoes on the baking sheet, glaze with reserved honey BBQ sauce, and sprinkle with Parmesan.
- Bake for another 15-20 minutes until the chicken is cooked through.
- Garnish with fresh parsley and serve.
Notes
For a spicy variation, add chipotle pepper to the BBQ sauce. Substitute chicken with firm tofu for a vegetarian option.
