- 4 boneless skinless chicken breasts, cut into cubes
- 1 cup flour
- 5 cups corn flakes cereal, crushed
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 3 eggs
- 1/4 cup milk
- 1 1/2 cups BBQ sauce
- 1/2 cup honey
- 1/2 cup ketchup
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your chicken by cutting the breasts into bite-sized cubes.
- Set up your dredging station with flour mix in one bowl & eggs in another.
- Crush the corn flakes in a zip-top bag until fine crumbs.
- Coat each piece of chicken in flour, dip in egg wash, and coat in corn flakes.
- Place the coated chicken on a parchment-lined baking sheet.
- Bake for about 20 minutes until cooked through and golden brown.
- Prepare the honey BBQ glaze by whisking BBQ sauce, honey, and ketchup over medium heat.
- Glaze the baked chicken with the honey BBQ mixture.
- Return chicken to the oven for an additional 5 minutes.
- Rest the chicken for a few minutes before serving.
Notes
Serve with rice, veggies, or salad. This recipe can also be prepped in advance and frozen for later.
