Ingredients

4 cups peeled and sliced peaches (fresh or thawed frozen)
1/2 cup granulated sugar
1/4 cup brown sugar
2 tbsp cornstarch
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp lemon juice
1/2 cup water
Optional: 1 tsp vanilla extract or almond extract
Instructions
In a saucepan, combine sugars, cornstarch, salt, and spices.
Stir in water and lemon juice. Bring to a gentle boil over medium heat.
Add peaches and simmer for 5–10 minutes until thickened and peaches are tender.
Stir in vanilla or almond extract if using.
Let cool. Use immediately or store in the fridge for up to 5 days.
