Description

A flavorful twist on a classic chicken salad, packed with protein and featuring the cozy, spicy notes of jalapeño poppers.


Ingredients

  • 3 cups cooked shredded chicken
  • 4 jalapeños, diced
  • 6 slices bacon, cooked & crumbled
  • 1 cup Greek yogurt or light mayo
  • 2 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. Prep your ingredients by shredding chicken and dicing jalapeños.
  2. Cook the bacon in a skillet over medium heat until crispy, then crumble it.
  3. Combine Greek yogurt (or mayo), cream cheese, garlic powder, and paprika in a bowl.
  4. Mix in shredded chicken, bacon, jalapeños, and cheddar cheese until well coated.
  5. Chill the salad in the fridge for about 30 minutes.
  6. Plate the salad in a serving bowl and garnish with fresh herbs.
  7. Dig in with tortilla chips, lettuce wraps, or as a sandwich spread!

Notes

For milder flavors, reduce jalapeños or use bell peppers. This salad can be prepared a day in advance.
