Ingredients

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt + more to taste
  • Freshly ground black pepper
  • 2 medium zucchini, thinly sliced (about 4 cups)
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1 cup shredded low-fat mozzarella cheese, divided
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • Fresh parsley or basil, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Add the diced chicken breast to a large skillet over medium heat. Season with oregano, smoked paprika, garlic powder, salt, and a sprinkle of pepper. Cook for about 5-7 minutes until the chicken is cooked through and lightly browned.
  4. Next, add the finely chopped onion and minced garlic to the pan. Cook for another 2-3 minutes until the onions are translucent.
  5. Add the thinly sliced zucchini to the skillet and cook for another 5 minutes until slightly tender.
  6. In a large mixing bowl, combine the eggs, Greek yogurt, half of the mozzarella, and a dash of salt and pepper. Whisk until smooth.
  7. Mix the sautéed chicken and zucchini into the creamy mixture until fully combined.
  8. Transfer the mixture into your greased baking dish, spreading it evenly.
  9. Sprinkle the remaining mozzarella cheese and the grated Parmesan on top.
  10. Bake in the preheated oven for about 30-35 minutes until golden brown.
  11. Cool for a few minutes, then garnish with fresh parsley or basil.
