Ingredients
6 whole wheat English muffins
6 large eggs
6 slices turkey bacon
6 slices cheddar or mozzarella cheese
Salt and pepper to taste
Cooking spray or olive oil
Instructions
Preheat oven to 350°F (175°C). Lightly spray a muffin tin or square baking dish.
Whisk eggs with salt and pepper. Pour into the tin or dish and bake for 12–15 minutes until set. Cut into 6 folded portions.
Cook turkey bacon in a skillet until crispy.
Toast English muffins lightly.
