Ingredients
• 4 oz (100g) cooked chicken breast, shredded or chopped
• ½ large avocado, diced
• 1 hard-boiled egg, chopped
• ⅓ cup cherry tomatoes, halved
• ½ cup spinach, chopped
• 1–2 scallions, thinly sliced
• 1 small cucumber, chopped
• 1 tbsp chopped olives
For the Dressing:
• 1 tbsp olive oil
• 1 tbsp lemon juice
• 1 clove garlic, minced
• 1 tsp sesame oil (optional)
• Salt & pepper to taste
Instructions
In a small bowl, whisk together the olive oil, lemon juice, garlic, sesame oil (if using), salt, and pepper.
In a large bowl, combine chicken, avocado, egg, tomatoes, spinach, scallions, cucumber, and olives.
Pour dressing over the salad and toss gently to combine.
Serve immediately or chill for later.
