- 1/2 cup Greek Yogurt
- 1/4 cup Lime Juice

- 1 Avocado, diced (optional)
- 1/2 cup Feta Cheese, crumbled (optional)
Instructions
- Prepare the Corn: Grill or boil fresh corn, or heat frozen corn in a skillet. Let it cool and cut the kernels off.
- Mix the Creamy Base: In a bowl, combine Greek yogurt, lime juice, chili powder, salt, and pepper. Whisk until smooth.
- Toss the Veggies: In a large bowl, mix cooled corn, red onion, and cilantro. Fold in the yogurt mixture carefully.
- Add Optional Ingredients: Gently mix in diced avocado and feta cheese if using.
- Taste Test: Adjust lime juice, salt, or chili powder to taste.
- Chill (Optional): Let the salad chill for at least 30 minutes before serving for best flavor.
Notes
For a lighter version, consider using coconut yogurt or cashew cream. Keep in mind that avocado may brown if added too early.
