This Healthy Slow Cooker Zuppa Toscana is still rich and hearty, thanks to lean turkey or chicken sausage, tender potatoes, kale, and a creamy (yet lightened-up) broth. It’s the kind of feel-good comfort food that warms you up without weighing you down.


Ingredients

1 lb lean Italian chicken or turkey sausage, casing removed

4 cups diced potatoes (Yukon gold or russet)

1 small onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1/2 tsp crushed red pepper flakes (optional)

Salt & black pepper to taste

1 cup unsweetened almond milk or low-fat milk

1/2 cup plain Greek yogurt or light cream

3 cups chopped kale

Optional: turkey bacon crumbles or Parmesan for topping


Instructions

Brown sausage in a skillet over medium heat, then transfer to the slow cooker.

Add potatoes, onion, garlic, broth, red pepper flakes, salt, and pepper.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.

Stir in milk and Greek yogurt (or cream), then add kale. Let cook another 15–20 minutes until kale is wilted and soup is creamy.

Garnish with turkey bacon or a sprinkle of Parmesan if desired.
