Ingredients
2 boneless, skinless chicken breasts
4 cups low-sodium vegetable broth
2 tablespoons white miso paste
2 teaspoons sesame oil
1 tablespoon soy sauce or tamari
2 cloves garlic, minced
1 tablespoon grated ginger
2 servings ramen noodles (fresh or dried)
1 cup baby spinach
1/2 cup shredded carrots
2 soft-boiled eggs (optional)
Green onions, sliced (for garnish)
Sesame seeds (for garnish)
Instructions
In a pot, heat sesame oil over medium heat. Add garlic and ginger; sauté until fragrant.
Stir in the miso paste, soy sauce, and broth. Simmer for 10 minutes.
While the broth simmers, season and sear chicken breasts until golden and cooked through. Slice thinly.
Cook ramen noodles according to package instructions.
