  • 4 large Bell Peppers
  • 1 pound Ground Chicken
  • 1 cup Cooked Rice
  • 1 can Diced Tomatoes
  • 1 teaspoon Onion Powder
  • 1 teaspoon Cumin
  • Salt and Pepper (to taste)
  • 1 cup Cheddar Cheese, shredded
  • Fresh Herbs (such as parsley or cilantro, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off of the bell peppers and remove the seeds.
  3. In a large skillet over medium heat, cook the ground chicken with salt, pepper, and cumin for 5-7 minutes until no longer pink.
  4. Add the cooked rice, diced tomatoes, and onion powder to the chicken and stir until well-combined. Cook for another 3-5 minutes.
  5. Stuff each bell pepper with the chicken and rice mixture, packing it in well.
  6. Place the stuffed peppers upright in a baking dish and cover with foil. Bake for 25 minutes.
  7. Remove the foil, sprinkle cheese on top of each pepper, and bake for another 10 minutes until the cheese is melted and slightly golden.
  8. Garnish with fresh herbs and serve warm.
