Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cucumbers, diced
  • 4 green onions, sliced
  • 1/4 cup fresh herbs (such as cilantro or parsley), chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, add a touch of olive oil and sauté the shrimp for 3-4 minutes until pink and opaque. Season with salt and pepper.
  2. While the shrimp cools, dice the cucumbers and slice the green onions.
  3. In a small bowl, combine Greek yogurt and lime juice, stirring until smooth and creamy. Season with a pinch of salt and pepper.
  4. In a large mixing bowl, combine shrimp, cucumbers, green onions, and herbs. Drizzle with dressing and toss gently.
  5. Transfer to a serving bowl and serve chilled or at room temperature.

Notes

Store any leftovers in an airtight container in the fridge for up to 2-3 days. Keep dressing separate until serving for optimal freshness.
