- 1 pound Chicken Breast
- 1 each of red, yellow, and green Bell Peppers
- 1 cup Broccoli Florets
- 2 medium Carrots, sliced
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- Salt and Pepper, to taste
- 1 teaspoon Dried Italian Herbs
- 1 cup Chicken Broth
Instructions
- Wash and chop your vegetables.
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken breast with salt, pepper, and half of the Italian herbs. Cook for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the pan and let it rest. Add minced garlic and sauté for 30 seconds.
- Add chopped bell peppers, carrots, and broccoli to the skillet. Sauté for 5-6 minutes.
- Cut the chicken into bite-sized pieces and return to the skillet. Pour in chicken broth and add remaining Italian herbs. Simmer for another 5 minutes.
- Adjust seasoning if needed and serve hot.
Notes
For a hearty meal, serve over rice or quinoa. Garnish with fresh herbs or cheese for added flavor.
