  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup shredded carrot
  • 1/4 cup chopped green bell pepper
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup pineapple chunks
  • 1/2 cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds
  • Green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the ground beef, breadcrumbs, chopped onion, shredded carrot, chopped green bell pepper, egg, salt, and pepper in a large mixing bowl.
  3. Shape about 2 tablespoons of mixture into meatballs and place them on a lined baking sheet.
  4. Bake for 15-20 minutes until the internal temperature reaches 160°F (70°C).
  5. Prepare the sauce by mixing together pineapple chunks, teriyaki sauce, soy sauce, and half of the sesame seeds in a small saucepan over medium heat.
  6. Glaze the cooked meatballs in the sauce.
  7. Serve the meatballs topped with remaining sesame seeds and sliced green onions.

Notes

These meatballs are delicious served over coconut rice or as appetizers with toothpicks.
