Ingredients

  • 1 lbs shrimp (peeled and deveined)
  • 810 corn or small flour tortillas
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼½ teaspoon ancho chili powder or cayenne pepper
  • 1 cup chopped fresh pineapple or mango (optional)
  • 23 cups slaw mix or thinly sliced cabbage
  • ¼ cup chopped red onion
  • 1 jalapeño, seeded and chopped
  • ¼ cup olive oil (for sauce)
  • 2 tablespoons water (plus more if needed)
  • 2 chopped green onions
  • ½ cup cilantro leaves
  • 2 cloves garlic, peeled
  • ½ teaspoon salt
  • Juice of 2 small limes
  • ½ cup sour cream or full-fat Greek yogurt
  • Smashed avocados for serving
  • Cotija cheese or crumbled Feta Cheese for serving
  • Lime wedges for serving
  • Fresh chopped cilantro for garnishing

Instructions

  1. Start by placing your peeled and deveined shrimp in a bowl. Drizzle in the olive oil and fresh lime juice.
  2. Sprinkle in the chili powder, cumin, oregano, onion powder, garlic powder, smoked paprika, salt, black pepper, and optional chili powder.
  3. Toss everything together until the shrimp are well-coated. Let marinate for 15-20 minutes.
  4. In another bowl, combine the slaw mix, chopped red onion, chopped jalapeño, and any extra veggies.
  5. For the dressing, blend cilantro leaves, garlic, lime juice, olive oil, chopped green onions, and salt until smooth. Pour over the slaw mixture and toss to combine.
  6. Heat your grill to medium-high or preheat a stovetop grill pan over medium heat.
  7. Once hot, shake off excess marinade and place the shrimp on the grill. Cook for 2-3 minutes on each side until pink and opaque.
  8. Wrap the tortillas in aluminum foil and warm them on the grill for about 5 minutes.
  9. Assemble the tacos by placing grilled shrimp in each tortilla, topping with cilantro lime slaw, fruit, avocado, Cotija cheese, and lime juice.
