- 2 boneless chicken thighs
- 1 ripe mango
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Prepare the Marinade: In a bowl, combine the soy sauce, olive oil, minced garlic, and lime juice. Whisk until well blended.
- Slice the Mango: Cut the ripe mango in half, remove the pit, and scoop flesh into a blender. Puree until smooth.
- Marinate the Chicken: Place chicken thighs in a resealable bag and pour marinade over them. Seal and let sit for at least 30 minutes.
- Preheat the Grill: Fire up your grill to medium-high heat.
- Grill the Chicken: Remove chicken from marinade and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
- Slice and Serve: Let the chicken rest for 5 minutes, slice, and serve with the leftover mango puree on top.
Notes
For a spicy kick, mix in chili flakes or jalapeños into the marinade. Serve with coconut rice or a fresh salad for added flavor.
