- 4 boneless, skinless chicken breasts
- 2 fresh lemons (juice and zest)
- 4 cloves fresh garlic (minced)
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon dried oregano
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Prepare the marinade: In a mixing bowl, combine the juice of two fresh lemons, zest from one lemon, minced garlic, olive oil, honey, oregano, and a pinch of salt and pepper. Whisk until mixed.
- Marinate the chicken: Place chicken in a ziplock bag or shallow dish, pour the marinade over it, and seal. Ensure well-coated.
- Preheat the grill: Fire up the grill to medium-high heat (375°F to 450°F).
- Grill the chicken: Remove chicken from marinade and grill for 6-7 minutes on one side. Flip and grill another 5-7 minutes until cooked through (internal temp 165°F).
- Baste the chicken: Brush it with leftover marinade during grilling.
- Let it rest: Remove from grill and let it rest for 5 minutes before slicing.
- Serve with pan drippings or garnish with fresh herbs and lemon wedges.
Notes
Marinate the chicken for at least 30 minutes, or up to overnight for best results. If short on time, thirty minutes is effective.
