Description

A flavorful journey to the Aegean with succulent chicken breasts marinated in a zesty Greek yogurt mixture.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and black pepper. Whisk until smooth and creamy.
  2. Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring every piece is thoroughly coated. Let marinate in the fridge for at least an hour or up to overnight.
  3. Heat the Grill or Pan: Preheat your grill to medium-high heat or heat a skillet over medium-high heat. Lightly oil the grates if using a grill.
  4. Cook the Chicken: Remove the chicken from the marinade, shaking off excess. Cook for about 6-7 minutes on each side until the internal temperature reaches 165°F.
  5. Rest and Garnish: Transfer the chicken to a plate and let it rest for about 5 minutes. Chop fresh parsley and slice lemon wedges.
  6. Serve: Slice the chicken and arrange on a platter. Sprinkle with parsley and serve with lemon wedges.

Notes

For extra flavor, add a drizzle of olive oil or sprinkle additional smoked paprika before serving. This dish also works with shrimp or pork chops using the same marinade.
