  • 2 large eggs, beaten
  • Vegetable oil for frying (about 2 cups)
  • 3/4 cup freshly squeezed orange juice
  • 1 tablespoon orange zest
  • 3 tablespoons gluten-free soy sauce
  • 2 tablespoons honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon cornstarch or tapioca starch
  • 2 tablespoons water (for cornstarch slurry)

Instructions

  1. Prepare the chicken by cutting the chicken breasts into bite-sized pieces.
  2. Coat the chicken with flour by whisking together gluten-free flour and salt, then dipping the chicken into beaten eggs and rolling it in the flour mixture.
  3. Heat the oil to medium-high in a large skillet or wok until it reaches 350°F.
  4. Fry the chicken pieces in batches until golden brown, about 4-5 minutes per batch.
  5. Make the sauce by whisking together orange juice, zest, soy sauce, honey, garlic, and ginger, and prepare a cornstarch slurry with water.
  6. Combine the sauce in the same pan after removing excess oil, bringing it to a simmer, and adding the cornstarch slurry to thicken.
  7. Toss the fried chicken in the thickened sauce until well-coated.

Notes

Resting the flour-coated chicken for 10 minutes before frying helps achieve a crispier texture. Always use fresh orange juice for better flavor.
