Description

A tangy and creamy German Potato Salad that combines Southern roots with vibrant flavors, perfect for any gathering.


Ingredients

  • 2 pounds of waxy potatoes (Yukon Gold or Red Potatoes)
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard (Dijon suggested)
  • 1/4 cup diced pickles
  • 1/4 cup diced onions (yellow or green)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the potatoes: Scrub and chop them into 1-inch chunks. Place in a pot, cover with water, add salt, and bring to a boil. Simmer for 15-20 minutes until tender.
  2. Drain the potatoes and let them cool slightly for 10-15 minutes.
  3. Whisk together mayonnaise, mustard, diced pickles, and diced onions in a bowl.
  4. Toss the cooled potatoes in the dressing gently so they are coated.
  5. Season with salt and pepper to taste.
  6. Serve in a bowl garnished with fresh parsley.

Notes
