Ingredients

- 2 pounds of waxy potatoes (Yukon Gold or Red Potatoes)
- 1/2 cup mayonnaise
- 2 tablespoons mustard (Dijon suggested)
- 1/4 cup diced pickles
- 1/4 cup diced onions (yellow or green)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil the potatoes: Scrub and chop them into 1-inch chunks. Place in a pot, cover with water, add salt, and bring to a boil. Simmer for 15-20 minutes until tender.
- Drain the potatoes and let them cool slightly for 10-15 minutes.
- Whisk together mayonnaise, mustard, diced pickles, and diced onions in a bowl.
- Toss the cooled potatoes in the dressing gently so they are coated.
- Season with salt and pepper to taste.
- Serve in a bowl garnished with fresh parsley.
Notes
Can be made a day in advance. Store in an airtight container in the fridge. Keep an eye on potatoes while boiling to avoid mushiness.
