- 1½ lbs sirloin steak, cut into bite-sized cubes
- 1½ lbs baby potatoes, halved or quartered
- 4 tablespoons olive oil (divided)
- 4 tablespoons butter
- 5–6 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prep your ingredients by cutting the steak into cubes and halving or quartering the baby potatoes. Mince garlic and chop parsley for garnish.
- Cook the potatoes in a skillet over medium heat with 2 tablespoons of olive oil, adding salt and pepper. Cook for 15-20 minutes until tender and golden brown.
- Sear the steak by pushing potatoes aside, melting 2 tablespoons of butter, adding garlic, and then the steak with paprika and herbs. Sear for 3-4 minutes on each side for medium-rare.
- Combine everything in the skillet, gently tossing to coat in the garlic-butter.
- Garnish with parsley and serve straight from the skillet.
