Description

Juicy grilled chicken thighs marinated in a zesty garlic and lemon mixture, perfect for any occasion.


Ingredients

  • 4 boneless skinless chicken thighs
  • 4 cloves garlic, minced
  • 2 lemons (juice and zest)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Combine minced garlic, lemon juice, lemon zest, olive oil, salt, pepper, and dried oregano in a mixing bowl.
  2. Pat chicken thighs dry with paper towels and place in a resealable plastic bag or shallow dish.
  3. Pour the marinade over the chicken and massage it for flavor absorption.
  4. Seal the bag or cover the dish and let marinate in the fridge for at least 30 minutes.
  5. Preheat the grill to medium-high heat (375°F to 400°F).
  6. Place marinated chicken on the grill and cook for 6-7 minutes without flipping.
  7. Flip chicken thighs and grill for another 5-7 minutes until they reach an internal temperature of 165°F.
  8. Remove from the grill and let rest for about 5 minutes before serving.

Notes

Marinate the chicken for longer for more flavor, but avoid marinating for too long to prevent the acid in the lemon from ‘cooking’ the chicken.
