- 4 boneless, skinless chicken breasts
- 4 cloves of garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 large russet potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, peeled and sliced into coins
- 2 tablespoons butter
- 2 tablespoons honey
Instructions
- Prep the Chicken: Start by patting your chicken breasts dry with paper towels. This helps achieve that golden, crispy exterior we all crave. Place them in a large mixing bowl or on a cutting board.
- Mix the Marinade: In a small bowl, combine minced garlic, chopped thyme, chopped rosemary, olive oil, salt, and pepper. This fragrant mixture is our marinade.
- Marinate: Let the chicken sit for 15 minutes while you prepare the rest of the ingredients.
- Heat Your Skillet: Grab a large skillet (cast iron is my go-to). Heat over medium-high heat and add a little olive oil.
- Sear the Chicken: Carefully add the marinated chicken breasts to the skillet and sear for about 5–6 minutes on one side until golden brown.
- Finish Cooking: After flipping, reduce the heat to medium and cover with a lid. Cook for another 5-7 minutes until the chicken reaches an internal temperature of 165°F.
- Rest: Remove the chicken from the skillet and let it rest for 5 minutes.
- Boil the Potatoes: In a large pot, bring salted water to a boil and add the cubed potatoes. Cook for around 15–20 minutes or until fork-tender.
- Drain and Mash: Once cooked, drain the potatoes and return them to the pot. Add butter and milk.
- Season: Mix well with a potato masher or electric mixer and add salt and pepper to taste.
- Cook the Carrots: In another skillet, melt the butter over medium heat. Add sliced carrots and cook for about 5 minutes.
- Add Honey: Once tender, drizzle in the honey and add a sprinkle of salt and pepper. Cook for another 3–4 minutes to caramelize.
- Final Stir: Toss the carrots to ensure they’re well-coated.
