Description

Quick-cook recipe for tender steak bites in a luscious garlic butter sauce, paired with sautéed zucchini.


Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip)
  • 1 medium zucchini, chopped
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Prep your ingredients by chopping zucchini into half-moons and cutting steak into 1-inch cubes.
  2. Season steak cubes with salt and black pepper in a bowl and let sit at room temperature for 15 minutes.
  3. Heat a skillet over medium-high heat and add olive oil. Once hot, sear steak cubes in a single layer for 1-2 minutes on each side until desired doneness.
  4. Reduce heat to medium, add butter and minced garlic, and stir to coat steak. Cook for another minute.
  5. Add zucchini and stir gently. Cook for 2-3 minutes until zucchini is slightly tender.
  6. Remove from heat and top with chopped parsley before serving.

Notes

Serve hot with potato wedges or a green salad. Enjoy with crusty bread to soak up the garlic butter sauce.
