Ingredients
For the Chicken:
1.5 lbs boneless chicken breast or thighs, cubed
2 tbsp garlic (minced)
2 tbsp butter
1 tbsp olive oil
Salt, pepper, paprika, and parsley to taste
For the Creamy Potatoes:
3 medium red or Yukon potatoes, diced
1/2 cup plain Greek yogurt or light sour cream
1 tbsp Dijon mustard
1 tsp garlic powder
1 tsp dried herbs (thyme or parsley)
Salt and pepper to taste
Instructions
Cook the Potatoes: Boil diced potatoes until tender, about 10–12 minutes. Drain and let cool slightly.
In a bowl, mix Greek yogurt, mustard, herbs, and seasoning. Add potatoes and stir until coated.
Cook the Chicken: Heat olive oil in a skillet. Add chicken, season well, and cook until golden and fully cooked.
