Tender, juicy steak bites coated in a flavorful garlic balsamic glaze, served with roasted baby gold potatoes and sautéed green beans.

- 2 lb lean steak (trimmed & cubed into 1-inch pieces)
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp black pepper
- ½ tbsp garlic powder
- ¼ tsp crushed red pepper (optional)
- 3 cloves garlic (minced)
- 2 tbsp balsamic vinegar (for the glaze)
- 2 tbsp low-sodium beef broth
- 1 tsp honey
- 1 tbsp soy sauce (additional for glaze)
- 1.5 lb baby gold potatoes (quartered)
- ½ tbsp olive oil (for the potatoes)
- ½ tsp salt (for the potatoes)
- ½ tsp black pepper (for the potatoes)
- ½ tbsp garlic powder (for the potatoes)
- 1 tsp paprika
- 12 oz fresh green beans (trimmed)
- ½ tbsp olive oil (for the green beans)
- ½ tsp salt (for the green beans)
- ½ tsp black pepper (for the green beans)
- ½ tbsp garlic powder (for the green beans)
Instructions
- Start by trimming your steak and cutting it into 1-inch cubes.
- Measure all your ingredients; trust me, having everything on hand makes the process smooth.
- In a bowl, whisk together the olive oil, soy sauce, balsamic vinegar, garlic powder, salt, black pepper, and crushed red pepper (if using).
- Toss in the steak cubes and coat each piece. Allow it to marinate for at least 30 minutes in the fridge.
- Fire up your oven to 400°F (200°C).
- Combine the quartered baby gold potatoes with olive oil, salt, black pepper, garlic powder, and paprika.
- Spread them out evenly and roast for about 25-30 minutes until golden and crispy.
- Heat a large skillet over medium-high heat and add the marinated steak cubes, ensuring they aren’t overcrowded.
- Sear them for about 2-3 minutes on each side until browned and cooked to your desired doneness.
- Add the minced garlic to the skillet and sauté for another minute before finishing the steak.
- Reduce the heat to medium and add balsamic vinegar, beef broth, honey, and additional soy sauce to make the glaze.
- In another pan, add olive oil and sauté the trimmed green beans for about 5-7 minutes until tender.
- Plate the steak bites over roasted potatoes with sautéed green beans on the side and drizzle remaining glaze over the top.
Notes
Serve with a sprinkle of fresh parsley or chives for garnish.
