- 2 lb lean steak, trimmed & cubed into 1-inch pieces
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp black pepper
- ½ tbsp garlic powder
- ¼ tsp crushed red pepper (optional)
- 3 cloves garlic, minced
- 1.5 lb baby gold potatoes, quartered
- ½ tbsp olive oil

- 12 oz fresh green beans, trimmed

Instructions
- Prepare the Marinated Steak: In a mixing bowl, combine the olive oil, soy sauce, balsamic vinegar, garlic, crushed red pepper (if using), salt, black pepper, and garlic powder. Stir until well mixed.
- Roast the Potatoes: Preheat your oven to 425°F (220°C). Toss the quartered baby gold potatoes with olive oil, salt, black pepper, garlic powder, and paprika until fully coated. Spread them on a baking sheet.
- Start Roasting: Place the baking sheet in the preheated oven and roast the potatoes for about 15-20 minutes until golden brown.
- Sear the Steak: Heat a skillet over medium-high heat. Add the marinated steak pieces in batches and let develop a crust before flipping.
- Cook the Green Beans: Toss trimmed green beans with olive oil, salt, black pepper, and garlic powder. After the potatoes have roasted for 20 minutes, add the green beans on the same baking sheet and toss.
- Glaze the Steak Bites: Remove cooked steak from heat, reduce heat to medium-low, add balsamic vinegar, beef broth, and honey to the skillet, stir until glaze thickens, then toss in the steak.
- Serve and Enjoy: Plate the roasted potatoes, steak bites, and green beans. Add a sprinkle of parsley for freshness.
Notes
Adjust marination time for more flavor. Don’t overcrowd baking sheets for crispy potatoes.
