- 1 teaspoon baking powder

- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups powdered sugar (for frosting)
- 2 tablespoons milk (or dairy-free alternative)
- 1 teaspoon vanilla extract (for frosting)
- Food coloring (various colors)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each. Then stir in the vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Scoop heaping spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
- For the frosting, whisk together powdered sugar, milk, and vanilla extract until smooth. Add food coloring.
- Once the cookies are cool, frost them with colorful frosting and decorate with sprinkles.
Notes
Feel free to add lemon zest, mini chocolate chips, or chopped nuts for variations. Store in an airtight container at room temperature for up to one week.
