Description
A hearty medley of ground beef, fresh cabbage, and zesty seasonings topped with crunchy Fritos and gooey cheese.
Ingredients

- 1 pound ground beef
- 1 small head of cabbage, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 cup shredded cheddar cheese
- 1 cup Fritos corn chips
- 1 tablespoon chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 3-5 minutes.
- Add minced garlic and the ground beef, breaking it up as you cook. Season with salt, pepper, and chili powder. Cook until the beef is browned, about 5-7 minutes.
- Stir in the chopped cabbage, mix with the beef, and add the diced tomatoes. Cover and cook for about 10 minutes, stirring occasionally.
- Once the cabbage has wilted, sprinkle shredded cheddar cheese over the mixture. Cover for a couple of minutes to melt the cheese.
- Serve in bowls topped with Fritos.
Notes
For a lighter version, drain excess fat after cooking beef. Can replace beef with plant-based alternatives.
