Description

A hearty medley of ground beef, fresh cabbage, and zesty seasonings topped with crunchy Fritos and gooey cheese.


Ingredients

  • 1 pound ground beef
  • 1 small head of cabbage, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup Fritos corn chips
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 3-5 minutes.
  2. Add minced garlic and the ground beef, breaking it up as you cook. Season with salt, pepper, and chili powder. Cook until the beef is browned, about 5-7 minutes.
  3. Stir in the chopped cabbage, mix with the beef, and add the diced tomatoes. Cover and cook for about 10 minutes, stirring occasionally.
  4. Once the cabbage has wilted, sprinkle shredded cheddar cheese over the mixture. Cover for a couple of minutes to melt the cheese.
  5. Serve in bowls topped with Fritos.

Notes

For a lighter version, drain excess fat after cooking beef. Can replace beef with plant-based alternatives.
