A vibrant and refreshing salad that captures the delicious essence of California rolls with cucumbers, avocado, and surimi in a tangy dressing.
Ingredients

- 2 large cucumbers
- 1 cup surimi (imitation crab) or real crab meat
- 1 avocado, diced
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons sesame seeds
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Wash the cucumbers and peel if necessary. Cut them in half lengthwise, scoop out the seeds, and slice into half-moon shapes.
- In a small bowl, whisk together rice vinegar, soy sauce, and sesame oil. Adjust sweetness if desired.
- In a mixing bowl, combine sliced cucumbers, surimi or crab, diced avocado, and green onions. Toss gently.
- Drizzle the dressing over the salad, toss lightly, and add sesame seeds. Adjust seasoning with salt and pepper as needed.
- Plate the salad and top with additional sesame seeds and green onions. Serve and enjoy!
