A versatile and flavorful dish made with tender chicken soaked in zesty salsa verde, perfect for tacos, meal prep, or cozy dinners.

- 2 pounds boneless skinless chicken breasts and/or thighs
- Kosher salt and black pepper
- 1 ¾ cups homemade or jarred salsa verde
- 4 cloves garlic, chopped (about 2 tablespoons)
- 1 jalapeño, stemmed, seeded, and chopped
- 2 teaspoons ground cumin
- 2 teaspoons dried Mexican oregano
- 1 teaspoon onion powder
- 4 scallions, sliced (about ¾ cup)
- 1 small bunch cilantro, leaves, and tender stems finely chopped (about 1 cup)
- 1 tablespoon honey (optional)
Instructions
- Prepare the chicken by seasoning it with kosher salt and black pepper on both sides.
- Pour 1 ¾ cups of salsa verde into your Instant Pot.
- Add chopped garlic, jalapeño, ground cumin, Mexican oregano, and onion powder to the salsa verde and stir well.
- Place the seasoned chicken into the salsa verde mixture in the Instant Pot.
- Lock your Instant Pot lid and set it to high pressure for 10 minutes for breasts or 12 minutes for thighs.
- Carefully perform a quick release of the pressure once done.
- Shred the chicken into bite-sized pieces using two forks and mix it back into the salsa verde.
- Toss in chopped scallions and cilantro before serving.
Notes
For slower cooking, you can use a slow cooker set on low for about 6 hours or high for 3-4 hours.
