Easy Salsa Verde Chicken

Description

A versatile and flavorful dish made with tender chicken soaked in zesty salsa verde, perfect for tacos, meal prep, or cozy dinners.


Ingredients

  • 2 pounds boneless skinless chicken breasts and/or thighs
  • Kosher salt and black pepper
  • 1 ¾ cups homemade or jarred salsa verde
  • 4 cloves garlic, chopped (about 2 tablespoons)
  • 1 jalapeño, stemmed, seeded, and chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons dried Mexican oregano
  • 1 teaspoon onion powder
  • 4 scallions, sliced (about ¾ cup)
  • 1 small bunch cilantro, leaves, and tender stems finely chopped (about 1 cup)
  • 1 tablespoon honey (optional)

Instructions

  1. Prepare the chicken by seasoning it with kosher salt and black pepper on both sides.
  2. Pour 1 ¾ cups of salsa verde into your Instant Pot.
  3. Add chopped garlic, jalapeño, ground cumin, Mexican oregano, and onion powder to the salsa verde and stir well.
  4. Place the seasoned chicken into the salsa verde mixture in the Instant Pot.
  5. Lock your Instant Pot lid and set it to high pressure for 10 minutes for breasts or 12 minutes for thighs.
  6. Carefully perform a quick release of the pressure once done.
  7. Shred the chicken into bite-sized pieces using two forks and mix it back into the salsa verde.
  8. Toss in chopped scallions and cilantro before serving.

Notes

For slower cooking, you can use a slow cooker set on low for about 6 hours or high for 3-4 hours.
